The kale from this salad will provide you with tons of vitamins and will
keep you feeling satisfied.
4 cups kale, chopped
2 cherry tomatoes, chopped
2 tablespoons cashews
1 tablespoon white raisins
2 tablespoons red onion, chopped
4 tablespoons balsamic vinegar
Juice from ½ lemon
2 tablespoons olive oil
Serving Size: 1 cup per serving

1. In a bowl, toss together kale, tomatoes, cashews, raisins and onion.
2. Separately, whisk together lemon juice and olive oil.
