An easy recipe that allows you to prepare lean and healthy protein
ahead of time!
Grated peel of 1 lime
Juice from 1 lime
½ teaspoon ground cumin
¼ teaspoon ground coriander
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 cups cooked whole-wheat couscous
1 cup chopped nectarine
8 ounces cod or other white fish
1-ounce cubed pieces
Serving Size: 4 pieces per serving

1. Mix the lime juice, cumin and coriander in a glass baking dish.
2. Place cubed fish into baking dish with marinade. Marinade in the refrigerator for 2 hours.
3. Preheat oven to 425 degrees F and bake for 30 minutes or until fish is flaky.
