A delicious and healthy meal!
1 cucumber, sliced into small round pieces
1 5-oz can of tuna
2 teaspoons Dijon mustard
1-2 teaspoons fresh lemon juice
1 teaspoon extra-virgin olive oil
5 cherry tomatoes, quartered

1. Drain the tuna and dump into a small bowl. Mash tuna with a fork and add the Dijon mustard, lemon juice and extra-virgin olive oil, mix.
2. Place the tuna mixture on top of the cucumber slices and top with a quartered cherry tomato. Enjoy!
