1 medium red onion, chopped
1/2 cup fresh lime juice
2 tablespoons capers
2 tablespoons Dijon mustard
1/2 teaspoon hot sauce
1 cup water
1/2 cup rice vinegar
1 pound uncooked shrimp
1 bay leaf
3 whole cloves
Yields 8 Shrimp

1. In a shallow dish, combine the onion, lime juice, capers, mustard and hot sauce. Set aside.
2. In a large saucepan, add the water, vinegar, cloves and bay leaf, bring to a boil and add the shrimp, cook for 1 minute.
3. Drain shrimp and transfer to other dish, discarding bay leaf and cloves. Stir shrimp with mixture. Cover and refrigerate until chilled, about 1 hour. Serve cold.
4. Cook until mixture thickens, stirring often.
